The Cascia saffron harvest

In October, at dawn and early in the morning, as soon as the sun rises and the first rays irradiate the cultivated fields, we can witness the spectacle of saffron blooming. In this moment the farmer, in a very delicate way, goes to “pick the flower” avoiding any contact with the inside.

Once the tens / hundreds of flowers have been collected, we proceed with the “withering”, a careful and delicate operation that is carried out flower by flower: the separation of the stigmas from the outside and from the petals.
The penultimate phase consists in the “toasting” with the drying of the collected stigmas and ends with the packaging phase.

All the stigmas will be carefully collected and placed in glass jars, as described in the association’s disciplinary. Finally, the jars are closed with a cork to seal them in the best possible way, leaving the product more protected than ever. The packaging in cardboard containers protects them from direct light and the glass jar with the cork stopper ensures that they will not come into contact with any environmental humidity.
